Nicolas Perrault

Based in the village of Dezize-les-Maranges at the bottom of the Cote de Beaune, Nicolas Perrault took over the family estate in 2012 following his father’s retirement. As is so often the case in family businesses, the younger generation did not agree with the approach of their elders and instead of joining his father, Nicolas worked his way up and down the Cote d’Or, including with the likes of Antoine Jobard.

In 2012 his father retired, and Nicolas was finally able to put his knowledge to good use. He quickly converted to organic and biodynamic practices with a progressive approach to vineyard work focused on revitalising old vines. In the winery, the reds will always include a portion of whole bunch (between 30-100% depending on vineyard and vintage) followed by fermentation in concrete. The whites are pressed to barrel for fermentation; and 2022 will see the addition of a Maranges village to the white selection after Nicolas replanted a terroir he felt was more suited to Chardonnay.

All of the wines are fermented using native yeasts and racked by gravity. Aging is in a mix of barrels, mostly large Stockingers, from 1 to 5 years old for 12-18 months. Sulphur is added only prior to bottling and none of the wines are fined or filtered. The results are wines with beautiful clarity and expression.

His harmonious vision and understanding of the living terroirs he works with, from soil to grapes; and how to extract the best of each individual plot, is simply astonishing. We could not be prouder to work with him, starting with 2022, a relatively generous and forgiving vintage where he made outstanding wines.
