After graduating from the prestigious hospitality school of Tain-l’Hermitage in the Rhône , Yohann worked as a sommelier for various French Chefs across the world for a decade before coming to London in 2012 where he still is still based today.
As many who work the floor, the dream is to one day make your own wine and since 2021 Yohann has managed to make that dream a reality. With strong connections in the Rhône valley, he partnered with Les 2 Cols, in St Gervais who allowed him to cherry pick grapes from his preferred parcels.
The vines are in a northern corner of the Southern Rhône where the Mistral winds still make their cooling presence felt, lending extra freshness to the resulting wine. The grapes are 95% Grenache with a sprinkling of old vine Clairette, all are destemmed, co-fermented and aged in a used Burgundy barrel.
We are suitably impressed by the expressive, fresh nature of the wine.
